Knock-Off KFC Cole Slaw

8 cups finely chopped cabbage (about 1 head)
1/4 cup shredded carrot (1 medium carrot)
2 Tbsp minced onion
1/3 cup granulated sugar
1/2 tsp salt
1/8 tsp pepper1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1-1/2 Tbsp white vinegar
2-1/2 Tbsp lemon juice

Be sure cabbage and carrots are chopped up into very fine pieces (about the size of rice). Combine sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar, and lemon juice in a large bowl and beat until smooth.Add cabbage, carrots, and onion; mix well.

Cover and refrigerate for at least 2 hours before serving.
Serves 10 to 12.

Cliff's Brisket

Cliff's Brisket

I don't have a smoker and cook mine in the oven all the time. I trim off lots of the fat, coat it with Brisket rub ( I use Fiesta brand ) put it in pan fat side up, and then pour some Claudes Brisket "marinade" sauce over the top. This gives it the smokey flavor and some kick. I add about 2 cups of water and then SEAL the top with Aluminum foil. I cook mine at 350 degrees for about 4 hours then check it. When the meat is about to fall apart I take it out, let the meat set for at least 30 mins to firm back up and slice it up. I take the juice and fats, put it in a jar, and set it in the freezer. The fat rises to the top, I skim it off and I have some super "juice" to add to the cut meat. This works great for us, but it is not the "dryer" type brisket so many places serve, but we love it.

Cliff's Hot Tea

Hot Tea
Here is a "recipe" I use for keeping critters out of my gardens and flower beds.

3-4 Habanero peppers
2 whole heads of garlic
1/4 cup of coarse ground black pepper
1/4 cup veg. oil
you can add cayenne pepper too if you want

Put all ingredients in a blender, add enough water so you can really blend it up. Then pour all of this into an empty 1 gal milk jug and fill with water. Let this set for up to a week, and then filter out some of the "tea" and spray it on your spot. The garlic smell, the heat from the peppers and pepper will help keep them from digging. Just keep the mixture off your hands, your skin can absorb it, and you will taste it later.!!!!!
