Squirrel

Young tender ones are pretty good battered and fried - like you would chicken, only don't over cook. The older ones are mighty tasty cooked with dumplins, as in a chicken and dumplin receipe - any of y'all that turn up your nose at at eatin squirrels need to apply for your Damn Yankee card.
