Stoli's Green Beans

I have finally perfected my green beans, and they are the best I have ever had or made.

Half a pack of bacon, fried about 3/4 done
Two bags of steamed green beans

Dump the green beans in the pan with the bacon, chopped up

Minced spiced garlic
touch of canjun seasoning
Lime juice
Touch of lemon pepper

Saute them until done - They are amazing!!!!

Guacamole (RaisinCain)

Guacamole

4 avocados
1/2 lime, juice only
2 Roma tomatoes, cut small or chunky
1 Jalapeno, chopped
1/4 to 1/2 purple onion, chopped
1/4 fresh cliantro
salt to taste

Get the avocados and skin those suckers. Mash them with a fork to your desired consistency. Mix in all other ingredients. After finished, invite me over.

Garlic Toast - 2 versions

For a quick, pretty good, & healthier garlic toast...spead thinly with "I Can't Believe it's Not Butter" Mediterranean blend and sprinkle with garlic powder. Toast in oven (use broiler setting). For Texas toast, omit garlic powder.

For really good garlic toast, cut the tops off of 2 or 3 whole bulbs of garlic, drizzle with olive oil and sprinkle with kosher salt. Roast about 20 minutes at 375*. Allow to cool and squeeze out the soft garlic and spread on thickly sliced, thinly buttered Fr. bread and toast it in the oven.

Grapefruit Margaritas

Grapefruit Margaritas

1 quart ruby red grapefruit juice
10 fresh mint leaves, torn in half
2 shots orange liqueur
8 shots tequila

Combine all the ingredients in a pitcher and stir to combine. Pour over ice and serve.

Emaw's Goulash

Emaw's Goulash

1 lb ground beef
1 medium onion, chopped
1 medium green bell pepper, chopped
2-4 garlic cloves, diced and smashed
1 (14 1/2 ounce) can tomatoes, dice if using whole, do not drain
1 (15 1/4 ounce) can whole kernel corn
1 (15 ounce) can tomato sauce
8 ounces dreamfield elbow macaroni
1-2 tablespoon chopped parsley
salt and pepper

Directions:
Prepare elbow macaroni according to directions on package till al dente.
Save a little of the pasta water in case you need it later to loosen the sauce.
Brown meat in a large skillet, drain the fat and add the onion and bell pepper half way through cooking.
Drain any ramaining fat when onion and pepper is done and add garlic, stir it about.
Add the meat mixture to the cooked macaroni, add the canned tomatoes, corn and sauce.
Mix all this together and add seasoning to taste.
You may need to add some of the pasta water to loosen the sauce if it is too dry.
This is really good the next day too.

Green Bean Casserole

A little different Green Bean Casserole for Easter
Scarlett~NC

2- 14 oz cans French Cut Green Beans, drained
1 small can Shoe Peg Corn / drained
1 can cream of celery soup
1 cup sour cream
1/2 cup grated American Cheese ( I use 3/4 cups)
1/2 cup finely chopped onions or 1/4 cup dried onion flakes
1 roll Ritz crackers, crushed
1/2 stick melted margarine or butter
1/2 slivered (chopped) almonds

Mix beans and corn put in 9 x 12 baking dish. Mix soup, sour cream, chesse and onions. Spread over beans and corn. Mix melted Margarine with crushed crackers and almonds. Spread on top. Bake uncovered at 350 for 35 min.

Green Jello Salad with Cottage Cheese

Green Jello Salad with Cottage Cheese

1 package lemon Jello
1 package lime Jello
1 tall can of pineapple
1 tall can evaporated milk
1 cup cottage cheese
1/2 cup mayonnaise or miracle whip
1/2 cup coarsely chopped pecans
pinch of salt

Drain pineapple into 2 cup glass measuring cup. Add enough water to the pineapple liquid to make 2 cups. Put into saucepan and heat liquid. Dissolve Jello in hot pineapple liquid. Put Jello into 1 1/2 quart container (the salad will ultimately be made in this container) Place in refrigerator to cool. Combine remaining ingredients and add to the Jello when the Jello becomes sticky. Combine well and place back in the refrigerator to set up.
